Ingredients

  • Powdered green tea, ½ ounce
  • Egg yolks, 15
  • Milk, 1 quart
  • Heavy Cream, 1 cup
  • Half and Half, 1 cup
  • Sugar, 1 pound

You’ll also need

  • Medium saucepan (for cooking)
  • Large spoon
  • Medium mixing bowl
  • Large saucepan (for cooling)
  • Ice cubes, up to 24

Preparation

Prepare Cold Water for Cooling Down the Mixture

  • Put the ice cubes in the large saucepan.
  • Set aside.

Warm up Milk and Tea

  • Pour milk into the medium-sized saucepan. Bring to a boil.
  • Remove the saucepan from heat.
  • Add the green tea to the saucepan.
  • Stir until the tea dissolves well with the heated milk.
  • Return the medium saucepan to stove top and cook over medium to high heat.
  • Remove the medium saucepan just before it reaches the boiling point.
  • Set it aside.

Cool Down the Mixture

  • Place the medium saucepan on top of the large saucepan that has ice in it. This helps cool down the ice cream fast without freezing it.
  • Wait until the milk and green tea mixture have completely cooled, and then add the heavy cream and half-and-half.
  • Stir until the mixture is foamy.

Beat the Egg Yolks

  • In a separate medium mixing bowl, mix the egg yolks.
  • Add the egg yolks to the mixture in the medium-sized saucepan.
  • Stir well.

Finish in Ice Cream Maker

  • Pour the mixture in your ice cream maker and process it according its operating instructions.
    Freeze for at least two hours.

Preparation

Warm up Some Ingredients

  • Turn heat to medium.

Use the Large-sized Mixing Bowl

  • Meanwhile, pour heavy cream in the large mixing bowl.
  • Add the matcha to the cream, whisking it in.
  • Lay a mesh strainer on the large bowl and then set the bowl aside.

Use the Medium Mixing Bowl

  • In the medium mixing bowl, add the egg yolks and mix together.
  • Add the warmed up mixture from saucepan to the medium mixing bowl, being careful to gently mix together the eggs.

Heat over Medium Heat

  • Pour the mixture back into the medium saucepan. Scrap any egg yolks on the sides of the bowl into the saucepan.
  • Use a spatula that is heat-proof or a large spoon to stir the mixture.
  • Stir over medium heat until the mixture thickens to a custard-like consistency. Scrape the sides as the mixture heats up.
  • Pour the thickened mixture over the mesh strainer that you put over that large bowl. (The one that contains the heavy cream and matcha.

Refrigerate
