This savory green tea ice cream recipe is a crowd-pleaser.

Ingredients

  • Powdered green tea, ½ ounce
  • Egg yolks, 15
  • Milk, 1 quart
  • Heavy Cream, 1 cup
  • Half and Half, 1 cup
  • Sugar, 1 pound

You’ll also need

  • Medium saucepan (for cooking)
  • Large spoon
  • Medium mixing bowl
  • Large saucepan (for cooling)
  • Ice cubes, up to 24

Preparation

Prepare Cold Water for Cooling Down the Mixture

  • Put the ice cubes in the large saucepan.
  • Set aside.

Warm up Milk and Tea

  • Pour milk into the medium-sized saucepan. Bring to a boil.
  • Remove the saucepan from heat.
  • Add the green tea to the saucepan.
  • Stir until the tea dissolves well with the heated milk.
  • Return the medium saucepan to stove top and cook over medium to high heat.
  • Remove the medium saucepan just before it reaches the boiling point.
  • Set it aside.

Cool Down the Mixture

  • Place the medium saucepan on top of the large saucepan that has ice in it. This helps cool down the ice cream fast without freezing it.
  • Wait until the milk and green tea mixture have completely cooled, and then add the heavy cream and half-and-half.
  • Stir until the mixture is foamy.

Beat the Egg Yolks

  • In a separate medium mixing bowl, mix the egg yolks.
  • Add the egg yolks to the mixture in the medium-sized saucepan.
  • Stir well.

Finish in Ice Cream Maker

  • Pour the mixture in your ice cream maker and process it according its operating instructions.
    Freeze for at least two hours.

Serves 15.

Serving Suggestion: Scoop ice cream in small bowls or tea cups.

Optional: Garnish with the fresh raspberry topping.

Authentic Matcha Green Tea Ice Cream

Try this flavorful recipe and taste the difference over store-bought traditional ice cream!

Ingredients

  • Whole milk, 1 cup
  • Sugar, ¾ cup
  • Heavy cream, 2 cups
  • Green tea powder (matcha), 4 teaspoons
  • Egg yolks, 6 large
  • Salt, a pinch

You’ll also need

  • Medium saucepan
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk or large spoon
  • Heat-proof spatula or large silver spoon
  • Mesh strainer

Preparation

Warm up Some Ingredients

  • Pour milk, sugar, and salt in saucepan.
  • Turn heat to medium.

Use the Large-sized Mixing Bowl

  • Meanwhile, pour heavy cream in the large mixing bowl.
  • Add the matcha to the cream, whisking it in.
  • Lay a mesh strainer on the large bowl and then set the bowl aside.

Use the Medium Mixing Bowl

  • In the medium mixing bowl, add the egg yolks and mix together.
  • Add the warmed up mixture from saucepan to the medium mixing bowl, being careful to gently mix together the eggs.

Heat over Medium Heat

  • Pour the mixture back into the medium saucepan. Scrap any egg yolks on the sides of the bowl into the saucepan.
  • Use a spatula that is heat-proof or a large spoon to stir the mixture.
  • Stir over medium heat until the mixture thickens to a custard-like consistency. Scrape the sides as the mixture heats up.
  • Pour the thickened mixture over the mesh strainer that you put over that large bowl. (The one that contains the heavy cream and matcha.
  • When finished straining, use a whisk or large spoon to stir the mixture together. Mix in a rapid motion to dissolve the ingredients into a frothy, light foamy consistency.

Refrigerate

  • Place mixture in refrigerator and stir every 15 minutes for up to an hour.
    Refrigerate for 12 hours at minimum, and a maximum of 24 hours.

Finish Making the Ice Cream

  • Use your ice cream maker. Follow the instructions for your appliance to finish making the ice cream.

Serving suggestions: Dish up 1/2 cup servings and enjoy. Also try 1/4 cup of green tea ice cream inside cooled down crepes. Roll crepes up like a burrito.

Fresh Raspberry Green Tea Ice Cream Topping

This tangy, but sweet fruit topping makes an excellent accompaniment for your ice cream.

Ingredients

  • Fresh raspberries with stems removed, 1 ½ pints
  • Sugar, 1 cup
  • Water, 1 cup

You’ll also need:

  • Medium saucepan
  • Large spoon
  • Food processor
  • Mesh strainer
  • Medium bowl

Start with the Medium Saucepan

  • Mix sugar, water and raspberries in saucepan.
  • After the mixture reaches the boiling point, reduce heat to simmer.
  • Heat for 15 minutes. Stir every few minutes to tear up strawberries.

Use Food Processor

  • Puree the mixture.
  • Put mesh strainer over bowl and then our mixture over mesh strainer to remove strawberry pieces.
  • Discard strawberry bits left in strainer.

Refrigerate

  • Place the bowl with the raspberry sauce in the refrigerator for one hour to cool.
  • Drizzle sauce over green tea ice cream.
  • Yields up to 1 cup, but varies based on how much fruit is in the final puree.
